The Flores Raras restaurant marks a new chapter in which the cuisine is built upon stews, memory and sensitivity. Under the direction of Carolina Álvarez, the project retains the technical rigour and DNA of Quique Dacosta, now expressed through a more intimate and personal perspective. The concept draws on local ingredients and opens up to the world through experience, resulting in dishes that reinterpret recipes and cultures through the lens of haute cuisine.
