A rice restaurant in El Palmar, belonging to the Comunidad de Pescadores del Palmar – founded in 1250 –, which bases its cuisine on the traditional Valencian recipe book, reinterpreted with subtle avant-garde touches. Rice remains the core, from classics to more creative proposals such as the one with bone marrow, Iberian secreto, mushrooms, and vegetable crudité, or the black rice with baby squid and tender garlic. Among the starters, the Russian salad with crispy papadum and piquillo pepper, the fried eel with guacamole cream and crispy onion, or the clóchinas with herb vinaigrette stand out; an experience faithful to the territory, but open to innovation.
