Toni Novo belongs to a family of restaurateurs with deep roots in Valencia. For the last 15 years he has been managing the restaurant founded by his family more than a century ago, Casa Carmela, a benchmark in the preparation of wood-fired paellas. In 2025 he set up La colonia de Carmela in an enclave emotionally linked to his personal and family life project. In those wooden huts he met the woman who is now the mother of his children and his life partner. He manages a team that takes care of all the details so that every meal is an experience, with sincere hospitality and familiarity in the treatment.
