Restaurant located in Cánovas, Michelin Star. A German chef, with a Valencian soul, who lives a constant process of reinvention and sees his work as the best antidote to adversity. The story of Bernd Knöller, a globetrotter of the kitchen, finds here a key stage after interacting with the environment, as he has managed to make a name for himself in the local culinary scene showing his particular, sometimes anarchic and always free, vision of creative Mediterranean cuisine, different every day. Raw materials? The rice dishes that betray his love for this land and, above all, the fish and seafood acquired at the auctions of the fish market. Curiosities? The ambient music, usually jazz, comes from a record player with vinyl chosen by the chef himself, who usually goes out to talk and explain the traceability of each product.
