Simposio aims to provide honest cuisine with the finest ingredients, cooked in a way that maximizes their essence. Our hallmarks include farm to table, since we endeavor to work with Valencian products. Approximately 85% of the restaurant’s dishes rely on products from small local producers in the region of Valencia. Another hallmark is transparency, as evidenced by our island in the middle of the restaurant, which lets the customers see how their dishes are prepared and presented at all times. They can walk up to it, watch, ask, and enjoy a dining experience that is different from what they are used to. On weekdays, the restaurant has two roles: it is a training space for both professionals and individuals and foodies, who enjoy with us our workshops and training courses, which make all our know-how available to those who wish to take it in. We can offer our space for private gatherings and work exclusively for groups of up to 20 people, which lets us host private celebrations, families, company meetings, product presentations, etc. Our group hours are from Tuesday to Thursday during the lunch and dinner service, 8-person minimum. We offer a gastronomic restaurant service from Friday at midday to Sunday. We have two tasting menus with 6 and 8 courses. And Fridays at midday, we offer a 4-course executive menu. We also have a wine list with 100% Valencian wines. Our goal is to offer the highest quality always in terms of the process and the products, which is why we only work with the finest ingredients to give our customers a unique and exclusive eating experience.
