Sutil was born in parallel with the growth of its founders, Sergio Rozas, Ibai Bengoechea and Sara Folgado, and a way of cooking that has gained balance, calm and intention. It is not an evolution of their first restaurant, Raro. Nor is it a leap or a break; it is a project with its own identity: a European bistro with a Mediterranean and Basque essence, guided by respect for the product and a more mature way of understanding cuisine. A new restaurant that takes the path of its protagonists and transforms it into something quieter, more mature, more profound. More subtle. Its offering, with Chema Gómez (El Rincón del Faro) as head chef, is based on the essentials: precise technique, clear flavours and an honest approach to each ingredient. In the dining room, led by Sara Folgado, the experience is built on restraint, warmth and the details that give meaning to everything. Located in Valencia's Ensanche district, Sutil is a small, straightforward space designed for unhurried enjoyment.
