As the name itself suggests, Vertical Restaurant offers a unique culinary experience in a city where the gastronomy scene is already thriving. Its Michelin-starred dynamic cuisine, creative foodie twists and refined ambience are all embraced by huge glass windows that frame gorgeous views of the city.
Expansive tasting menus come courtesy of head chef Jorge Andres – a highly acclaimed international name. His expertise blends with the talent and creative vision of founder Loles Salvador, an icon within the Spanish food industry and a master of the professional kitchen with more than 40 years’ experience. Her experience has seen her take the helm of La Sal, a legendary Valencia restaurant which has also earned its own Michelin star.

Vertical opened in 2007 and vertical 1has been the subject of rave reviews from diners who have praised the innovation of the cuisine and the elegant surroundings. The menu takes in traditional Valencia fare, which varies according to season and locally available fresh produce. Delicate and high-quality ingredients are fused to create interesting flavour combinations, such as the cured tuna with partridge and foie gras on the lunchtime menu or ox loin with pickled carrot reduction for dinner. The chefs are Vertical are not afraid to be adventurous and the result is delectable and highly original cuisine, which is the epitome of, fine dining.

This high-end restaurant also owes its success to a forward-thinking and open-minded approach, which sees Vertical continuously fulfilling new ambitions. Its Sky Bar was opened in 2013 on the roof of the restaurant, offering an intimate space and a lovely place to enjoy the warm spring and summer nights and fresh sea breeze.

Located on the ninth floor of the Hotel Confortel Aqua 4* and opposite the City of Arts and Sciences, Vertical enjoys a privileged location. There is also an extensive wine cellar where you will find all manner of tastes to complement your meal.

Chef, Jorge Andres, offers a cuisine with an ongoing review of Valencian recipes. This renewed commitment to tradition is expressed through a tasting menu that is updated depending on the product and the season.
