Expansive tasting menus come courtesy of head chef Jorge Andres – a highly acclaimed international name. His expertise blends with the talent and creative vision of founder Loles Salvador, an icon within the Spanish food industry and a master of the professional kitchen with more than 40 years’ experience. Her experience has seen her take the helm of La Sal, a legendary Valencia restaurant which has also earned its own Michelin star.
Vertical opened in 2007 and has been the subject of rave reviews from diners who have praised the innovation of the cuisine and the elegant surroundings. The menu takes in traditional Valencia fare, which varies according to season and locally available fresh produce. Delicate and high-quality ingredients are fused to create interesting flavour combinations, such as the cured tuna with partridge and foie gras on the lunchtime menu or ox loin with pickled carrot reduction for dinner.
